Rainy Day Eggs
Finally I broke down and bought a Tamagoyaki Pan, which is perfect for using outdoors in my Open Air Kitchenette.
I preheated this rectangular shaped pan in butter with frilled amaranth leaves ( Amaranthus fimbriatus), chopped onion scapes, and black pepper before adding 2 eggs one at a time, whisked in flour and milk.
It was an omelette worthy of my recollection of watching Midnight Diner back in the days.
Naturally, as soon as I got everything out on my little table ready to cook it started raining. Not just a sprinkle but real rain, such as we seldom see here in the high desert.
